Easiest Delicious Oven Baked BBQ Pork Chops

These pork chops are seasoned with garlic, onion, smoky paprika, cumin, and a touch of ginger and cinnamon, then seared to a crispy, caramelized crust. Ingredients

  • 2 lb (900 g) pork loin or sirloin chops

  • 1 tbsp olive oil (15 ml)

  • ½ tsp ginger powder

  • 1 tsp fine Himalayan pink salt

  • Fresh ground black pepper

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp paprika

  • 1 tsp ground cumin

  • ½ tsp chili powder

  • ½ tsp granulated sugar

  • ¼ tsp ground cinnamon

  • ¾ cup (180 ml) BBQ saucebrushing

Step-by-Step Instructions

Preheat & Prep (5 min)

① Heat oven to 400°F / 205°C.

②Pat chops very dry with paper towels (dry surface = better browning).

③In a small bowl, mix the BBQ seasoning thoroughly.

④Drizzle chops with about ½ tsp of the olive oil, rub to lightly coat; sprinkle the BBQ seasoning evenly on all sides. Let sit at room temp 10 minutes while you heat the pan.

Sear (3–4 min).

①Heat a large oven-safe skillet (cast iron ideal) over medium-high until hot.

②Add remaining olive oil; when it shimmers, lay in the chops without crowding.

③Sear 2 minutes on the first side (don’t move them). Flip and sear 1–2 minutes on the second side until you see a deep golden crust.

First Brush & Oven Finish (6–10 min).

①Turn off the burner. Brush the tops of the chops generously with BBQ sauce.

②Transfer the skillet to the oven and roast 6–10 minutes (thickness dependent) until the center hits 138–140°F / 59–60°C on an instant-read thermometer.

Final Glaze & Rest (5 min).

①Remove from oven; brush again with BBQ sauce (light but even coat).

②Transfer chops to a warm plate; rest 5 minutes (carryover brings them to 145°F / 63°C).

Add a small brush of warmed BBQ sauce at the table if you like. Slice near the bone (if bone-in) and serve immediately.
